This veggie breakfast scramble is the perfect breakfast. First of all, it has bacon and avocado but also, it actually only takes about 15 minutes to make so you can easily make this on a weekday.
Breakfast is by far my favorite meal of the day. I almost never miss it but when I do, I apologize in advance for my hangry attitude. This veggie breakfast scramble is my breakfast. It is so filling and easy to make that I pretty much make it at least once a week—if not more.
Really, this breakfast scramble is pretty healthy. I know, I know, it does have bacon in it but split between two people, it is only 1 ½ slices, that barely counts, right?
I started making this breakfast scramble last year when I decided that I wanted to eat more vegetables. Adding some vegetables to breakfast is a great way to start your day and get those extra servings in. In fact, most days I try to eat vegetables with every single meal. Sometimes, I fail miserably like when I just want some cheese pizza—with no salad.
Back to breakfast. The avocado, cheese and bacon make this breakfast scramble feel like a cheat meal but really there’s just enough in there to make it dang delicious without needing to be a cheat meal!
Veggie Breakfast Scramble
Time: 15 minutes
Makes: 2 servings
Ingredients
4 eggs
1/4 cup milk (I used 1% but use whichever one you prefer)
1/3 cup shredded cheddar cheese
1/2 medium yellow onion, chopped
1 medium tomato, diced
3 slices bacon, chopped
1/2 avocado, diced
1 tsp olive oil
Salt & Pepper, a pinch of each
Directions
Start by cooking bacon in your preferred way (though it should be crispy).* Once the bacon is done cooking, heat the skillet on medium heat and add the oil. Chop the onions and add to the skillet, browning them. While the onions are browning, dice the tomato and whisk together the eggs, milk, and salt and pepper in a small bowl. Add the egg mixture and then tomatoes to the skillet. Using a rubber spatula, stir the eggs. When the eggs are almost cooked, add in the chopped bacon and cheese. Once the eggs are finished and the cheese is melted, divide the eggs and plate. Add the diced avocado on top and enjoy!
*On weekdays, I throw the bacon in the microwave. Not the best way but does the job.
