The How-To:
Call me crazy but I like to be fully prepped and all set up before I heat skillets full of oil. So, first things first, I cut the chicken into bit-sized pieces. Then, in my fabulous Pampered Chef Coating Tray, I stir together the flour, garlic powder, salt and pepper in one tray. In another tray, I whisked together the egg, milk, and some more salt and pepper.
A trick I didn’t pay attention to the first time I made these is to coat the chicken pieces in the flour mixture first before going into the egg mixture. You’ll want to follow the flour, egg, flour steps—and completely coat the chicken in each step.
Once, I coated the chicken, I warmed a couple inches of oil in a skillet over medium heat. Fry the chicken pieces until golden brown on both sides. Remove and drain the oil on paper towels. After the chicken has cooled for a few minutes, toss the chicken in a bowl with the sweet chili sauce.
Garnish, if desired. And, enjoy!!
Ingredients:
1 large boneless and skinless chicken breast
½ cup all purpose flour
½ tsp garlic powder
1 egg
2 tbsp milk
1/3 cup sweet chili sauce
salt & pepper, to taste
vegetable oil (or peanut oil)
Optional garnish: cilantro and carrots
