Where did summer go? I traveled to Denver and Las Vegas and a few weekend trips here and there–and I woke up this morning and suddenly it’s two weeks until Labor Day.
I swear the trees know something we don’t know (or aren’t willing to admit), that summer is pretty much over. I have trees in my neighborhood (and yard) that are already starting to turn colors. I walked my dog this morning and there are even leaves on the sidewalks in some places.
Part of me is sad but most of me is so excited about fall. Fall is my favorite season. At the beginning of summer, I like to think that summer is a close second but it just isn’t. Fall is a fresh start. I tend to get more organized, more settled, and more involved. Fall features festivals, orchards, school, more programming, and all the organizations that I am involved with pick back up.
The food gets better too. I’m so excited for apple season that just kicked off. I’ll try not to go too apple crazy here but there are some great recipes coming. Today I’m sharing a salad that features apples but not in a traditional way.
The Gorgonzola Apple Steak Salad is one of the best salads that I’ve made in some time. First of all there’s steak so that’s almost good enough. But, the apples, gorgonzola cheese and dried cranberries mix together for this sweet and savory salad. They complement each other so you don’t get too much sweetness from the fruit or bite from the cheese. This flank steak is juicy and tender after using a mixture of spices and the balsamic vinaigrette ties it all together for a fresh, filling salad that will curb any cravings you might be having.
