Bacon Cheddar Breakfast Sandwich

I’m a huge breakfast person. I very rarely miss breakfast and when I do, I need one of those shirts apologizing for what I said when I was hangry. Today’s creation is something I came up with through necessity. I had just moved to Chicago (for the first time) and had no food in my apartment. So, I wandered my neighborhood and came across a local bagel shop…and not much else at the time. Excited, I went in to order a breakfast sandwich but they didn’t have a kitchen and didn’t have eggs. Um, what. Ok, I’ll just go with a BLT on a bagel then, thanks. What do you mean you only have spinach? Ok, I’ll eat spinach but I want some cheddar cheese. And, ladies and gentlemen, that day I negotiated what has become a go to for breakfast for me: a bacon, cheddar, spinach, tomato sandwich on an everything bagel.

Over the years, I’ve moved and started eating at home so I’ve made this breakfast sandwich at home all across the country. Besides bacon and cheddar and carbs, the best part of it is that the sandwich can be made in about 7 minutes. As someone who isn’t a morning person, I’m always on a tight schedule and this recipe is quick and portable.

Bacon Cheddar Bagel Breakfast Sandwich

Serves: 1
Time: 7 minutes


1 Everything Bagel
4 Slices of Bacon
Handful of Spinach
1 Slice of Cheddar Cheese
1 Slice of Tomato
Salt & Pepper

The How-To

Line a plate with a paper towel and place the bacon in the microwave for approximately 5 minutes. Microwave times vary so watch it closely but you want crispy bacon for this sandwich. While the bacon is cooking, lightly toast the bagel and begin layering on the ingredients (cheese, spinach, tomato and salt and pepper). Break the bacon in half and add it to the sandwich. Place the top of the bagel onto the sandwich and put the sandwich into a skillet on medium heat. Place a panini press on top and cook for 2-3 minutes to melt the cheese. If you don’t have a panini press, you can use a skillet. Enjoy!
