This Easy Summer Stone Fruit Salad is the perfect summer salad. It’s full of peaches, nectarines, cherries, tomatoes, blue cheese, and sunflower seeds. Plus, I used store-bought strawberry poppyseed dressing that’s full of flavor and makes this a quick, easy, summer salad.
I struggle around lunch time pretty much every day. I’m hungry midday but have little to no plan to feed myself. I work from home so I don’t have to pack a lunch or meal prep because I’m just a few feet from my kitchen. Salads are my go-to in the summertime but honestly I’ve been in a salad rut. It’s not a bad kind of rut. My go to salad is super tasty but I’ve had it a few times a week for about the last six months. With all of this fresh fruit in season right now, I needed to mix it up a bit.
This stone fruit salad is so easy to make and it’s great to eat a meal that’s fresh and in season. This salad includes peaches, nectarines, cherries, tomatoes, blue cheese, and sunflower seeds. It’s so delicious. Since this is my new go-to summer salad, it had to be something that I could essentially spend a few minutes throwing together and get on with my day.
I love homemade salad dressings but this Marzetti Simply Dressed Strawberry Poppyseed Dressing was the perfect addition to this salad. I don’t have to commit to whipping together a homemade dressing and it’s absolutely delicious. Now, you can totally whip together a homemade version of this dressing but I like to have dressings on hand that are ready to go when I am so that I never have an excuse.
You will love this simple salad as much as I do. And, you’ll also love how flavorful and satisfying it is. Plus, add in some chicken, fish, or tofu for added protein! I skipped it this go around because I like to skip meat during lunch (trying to lower that carbon footprint, friends).
- 1 package of mixed spring greens
- 1 cup of grape tomatoes
- 1 peach
- 1 nectarine
- 1 cup of cherries, pitted and halved
- 1/2 cup blue cheese
- 1/4 cup sunflower seeds
- Marzetti Simply Dressed Strawberry Poppyseed Dressing
- Prepare the stone fruit. Slice the peach and apricot. Pit and halve cherries. Cut the grape tomatoes in half. Top the spring greens with all the toppings, add dressing and enjoy. Easy Peasy!
