I always struggle with lunch. Mostly, I struggle with what can I eat that isn’t a salad, isn’t a sandwich and isn’t takeout. The struggle is real guys.
This week in particular, I’ve struggled to the point that I just skipped lunch (<<<— bad). So, I got into the kitchen to work up some new lunch options. These Easy Buffalo Chicken Lettuce Wraps are the first recipe I’m sharing with you—and man, are they delicious.
What’s so great about them is that they are super easy to make. Other than chopping some vegetables and herbs, you just need to cook a piece of chicken. I threw a big piece of chicken on my cast iron grill and in about 20 minutes I was eating these babies for lunch today. So, freaking easy. And, if you take your lunch to work, you can easily package these ingredients up in little bowls or sandwich bags. Assembly is all you need to do when you are ready to eat them.
These buffalo chicken wraps also happen to be pretty healthy. It’s low-carb and so tasty that you don’t even need cheese. The ranch dressing is light too. You could easily substitute blue cheese dressing but man will that rack up the calories quick.
