Happy Halloween!! Sorry for the drop off but the real, paying job takes priority and it’s been crazy busy. And, I’m old so I need to sleep off the longer hours. ๐
I love chili. I love pumpkin. So, when I found this recipe for pumpkin chili I immediately knew that this was happening. And, turns out that it was actually awesome. The great part about this recipe is that it is a crock pot recipe that you prepare a few items and then throw it all in the crock pot until it’s done. This is a great recipe for nights like tonight where you might have a ton going on but still want a nice, home cooked meal!
Pumpkin Chili
Ingredients
1lb Ground Beef
1 can Pumpkin Puree
8 oz Tomato Sauce
15 oz Diced Tomatoes in juice
1 can Black Beans, drained and rinsed
1 Medium Onion, chopped
1 Garlic Clove, minced
1/3 cup Salsa
2 cups Vegetable Broth
1 Green Pepper, chopped
1 Jalapeno Pepper, chopped
1/2 tsp. Oregano
1 tsp. Chili Powder
1/2 tsp. Cayenne Pepper
Optional toppings: Scallions, cheese, sour cream, tortilla chips
The How-To
As I mentioned, this is a great recipe for when you are busy (or lazyโฆor both). Start by browning the ground beef, draining off the grease and putting the cooked ground beef in the crock pot. Next, chop, dice and mince your vegetables. Throw all of these ingredients into the crock pot. And, let it cook on high for about an hour, or until done. Another option is to put the crockpot on low and let it cook while you knock items off your to-do list.
